ooo yea if you're using the debian package, it's really easy to walk that back because iirc debian keeps old packages on their repo servers so you can redownload and rollback, then in your apt configuration you can ignore mariadb and in this case you'll want to ignore the mariadb-dev headers too since that's what AC would be compiling against

if your libmariadb-dev and libmariadb packages are out of sync (possible if you blocked one but not the other but unlikely because i would bet apt isn't this stupid) with eachother (different versions) you would definitely get mismatched client and server versions like you described above

To put it in a simpler way: apt-get update is like "check for updates" on windows, while apt-get upgrade is like telling it to actually install available updates after listing them
