The plan is to use this at a lan party for some competitions, is there any good way to calculate what kind of hardware I will need for 100-120 active players? Im guessing 16gb of ram wont do the trick

To be safe I'd try to get at least 4 cpu cores, 2 might be able to handle it but I wouldn't, and 16GB of RAM. Frankly, you mention competition which could mean different things. Raid-related? No need for a lot of RAM since people won't load many grids.
