That's also where you put the texture, but since you're modify an existing model the texture will probably stay the same

In this case I was doing my testing with a night elf. Would I be able to have a night elf model that I could put the item over to make sure everything's in the right spot? Just not sure if there are easy options for making sure custom item appearances look right or not.
