If the flames are a particle then color is set in the DBC/DB2.

No. The textures for particles are usually gray, and then recolored in-game through the DBC/DB2 setting.

I don't know the exact details for Legion. It's CreatureDisplayInfo in Wrath that sets it and then ParticleColor that has the data for the actual color sets, but you can probably just use an existing ParticleColor entry in most cases. I don't know how much of this system changed in Legion though, it's the same in Cata and that's as far as I know.

I don't know that model specifically. It shouldn't change the whole thing though. You'd have to try it though, I don't know the specifics of that model, just how particles work in WoW in general.
