I tried the acore-docker, but it seems not super maintained. Does it work?

it doesn't need to be maintained because it's just a docker-compose file that pulls the new images generated by the azerothcore-wotlk pipeline

I've managed to run countless domains with a single VPS by just using docker and a TCP router that I built years ago (noderouter)

it's also a money saver I'd say I would have spent 6 euro per month per each container to have a fallback IP to setup proper DNS from the outside
