You can create new databases under the names `modded_auth` etc for instance, along with the default ones that already exist

Depending on what you'll do you will probably only need a different characters and/or world db, you can most likely reuse the same auth db

Yeah I was afraid of that, ideally I'd be able to migrate them but I don't know enough about manipulating databases to do it with any confidence.

Also, while I'm here, how much would I screw things up if I deleted dead table entries? I have a few that aren't connected to code in any way, they throw errors quite a lot.

Depends. If they're tables you made yourself, it's safe if no code uses them anymore. Otherwise they're probably here for a reason

When I set up my dev server I just copied my existing character/world DBs into new ones with _dev suffix.
Then update that in the worldserver.conf and done
