is there a guide for how much ram we need to support a certain amount of players? I'm looking to support 25, 50ish max

Very little. I would go with 8 to be safe but 4GB should be fine as a safety too as long as the server isn't up for weeks upon weeks.

I really don't know. As you can see, my tailor has her items sorted by the required profession skill level. All items in the entire list works like that. 450 at the top, 1 at the bottom.
