You just have to check exactly where boost stores the required directories so you can set them with cmake

Yes but it might conflict with the older version I have from my package manager, and I'd rather keep it encapsulated in case the package maintainers ever update it

If you're not using root, building it without using sudo probably means it doesn't have permission to store it in /usr/local
