Compiling the server with just the basic systems (Spells, Events, Creatures, etc.), without the default database and dbc entries.
Looking to start a server from scratch, and only use the data I need.

That's not what AC is aiming at, it doesn't exist to my knowledge.
You could fork the repo and remove all SQLs you don't want.

I tried truncating tables, but I ran into errors most likely due to certain entries being dependencies for scripts, I'll probably fork the repo and take a less aggressive approach to cleaning up

be careful when dropping the tables as some/most prepared statements are relying on them. You would have to either leave the tables or remove the prepared statements depending on what you need

The approach was heavy handed mainly to see where and if exceptions would be raised or handled

The plan is using the basic system architecture, just scrapping all the World of Warcraft game events, dungeon scripts, etc.
Basically leaving the minimum viable requirements to have a clean slate to start modding
