if i use disable combat with players, then they dont hit with the spell anymore

you could try calling the summon creature with a depsawn out of combat of max integer

i have playerbots, and if a playerbot gets hit by a knockback, the mob doesnt despawn and it continues its path (after a very brief turn around)
