Would you say it'd be smarter for me, a level zero, to just go with 3.3.5 due to the tools and stability and just slowly learn how to implement Cata world and MoP classes as I learn, little by little?
What would your suggestion be?

I do think 3.3.5 has so much more support. You can learn a lot of the basics and use that to expand into other cores later. So I think that's a good idea

It's free to ask here. Mostly it takes a bit of reading and willingness to spend some hours troubleshooting issues.
Mostly hurdle is getting the exact specific tools needed set up so you can install without an issue.
A hurdle of mine was getting mysql and the right version. My operating system didn't have access to it and kept installing mariadb instead lol

If you want to customize the core for azerothcore, you just create a module. If you want to customize trinitycore, you're gonna need to diverge off the main branch and things get tricky wjth updating if you don't have a good git setup and know how to pull from upstream
