there's some tools to parse the map files and get a list of all the objects in it and their textures

you could open the .adt files with an hex editor and a template and you'll see the models list

To get your map fully working you need :
- obviously the basic map parts, dbcs, wdt, adts etc
- The M2 models referenced in the .adt (MMDX chunk)
- WMO models referenced in the .adt MWMO chunk
- map textures referenced in .adt MTEX chunk


- the textures and other things used by the models, you need to parse them like .adts, they contain reference to texture files and other things

If you're a beginner it's probably easier to have the whole client converted, if you're experimented and want to optimise space, parse(or use tools to do so)
