do you have to implement a whole physics engine for pathing/walking to behave "decently" or just snapping to ground and checking if triangles angle is "climbable" is enough just to be "usable" ?

A whole physics engine is definitely not needed for simple pathing.
Wow's physics are relatively simple

not sure how much work a "walk" mode in noggit would be, but if there's no need for complex collision and physics it's pretty much just snap model to ground, move with inputs, place camera, do terrain check for pathing

for something very basic

Terrain only is extremely simple of course

You don't even need any kind of real physics for that

Just a height calculation based on position in the grid

That would probably be a couple of hours

still need to implement some basic gravity also

You avoid a lot of problems if you just do first person
