currently selection doesn't actually give you the liquid data exactly where you clicked (there's no intersection with the liquid map, only the terrain chunk).
the liquid details displayed are those at the center of the selected terrain chunk.

and yes I think there's a hotkey to get height from a water plane, should be in the UI tbf

Pressing F, you get the height from the terrain but, i'd say it's enough
