You need to have a proper listfile in the MPQ. Iirc when MPQ editor opens MPQ it reads the listfile there. Or you can point it to a different one. As there is an option in the menus to select which listfile you want. If you have a bunch of 'encrypted' data labeled fileXXXXXX that's because they're not in the listfile. You can find some listfiles online that encompass every retail expansion and whatnot. If you're trying to access custom content you're out of luck unless you can determine the models paths yourself or through other methods I will not detail.

Listfile is just a fat text file telling the MPQ what these files mean and how they're structured in the file tree.

Well if you get one of those 'Master listfiles' it should just be a big listfile for all the Blizzard expansions merged in one. Then you'll load everything easily.
