No problem, for testing with .morph it is enough just the dbc in the mpq patch, but to create an npc you need server-side information.

There are only two possibilities: either you create the same NPC with a different creature ID or using SMartAI and the guid of this NPC you can give the NPC an individual faction.

Or you can use SmartAI to change the NPC flags so that this NPC cannot be attacked.
If you don't know how to do this, the easiest way is to create the same NPC again with the same faction and the NPC flag so that a player and not an NPC can attack it.

Anyone else had this before with WDBX? Tried it with SQL 5.7 / 8.0 / 8.1, never did this before and even tried with a fresh download of WDBX when trying to export to SQL
