editing the blp texture used by a model might be as simple as converting it into png, changing the colour, and converting it back into blp with the same original name in a new MPQ patch. if you want it to be assigned to a new model, you could try editing the texture references in hex through use of a template in 010 editor on a new copy so it references your edited blp. remember to change model name as well in binary, wouldnt risk ignoring that

importing your map, in its simplest form, involves three steps:
making a patch-4 with structure <world/maps/nameofmap/...> with wdl, wdt, and adts
making a patch-enUS-4 (us client) structure <DBFilesClient/...> with dbcs like Map, MapDifficulty, AreaTable and so forth depending on which you have (this goes in your locale folder)
extracting the server maps (maps, vmaps, mmaps (you can skip this longer extract for pathfinding if you just want to check it out in-game)) and placing those folders alongside your server binaries so they replace your previous maps
