They aren't models except for the shoulders and helmet, they are textures stored in I believe items/objectcomponents/textures or something along those lines. Then the textures are defined in the item display id dbc to be a display id. If by model you mean you want to use an actual 3d model, then that is very hard to do and will require a lot of work.

I have done this for the newer versions of the game, but I don't know how it works for the wrath client. You know using blender to replace the old mesh , obj to m2i then m2i to m2

It's much easier to edit models in wrath, just use wbs and no converters are needed
