working with the exe is mostly generic reverse engineering (basic understanding of assembly language is required). you're generally looking at learning a program like IDA pro or ghidra (the former is more commonly used in wow modding).
once you understand the basics of using a program like that, the wowdev wiki is where you go for documentation on the game:

you can use 010 for things like editing certain file formats, but it's not very useful for editing the exe. of course, if you're _very_ good at assembly languages you can do your edits in 010, but there isn't much reason to

if you're _new_ to assembly i'd strongly recommend that you get a version of IDA that supports decompilation into C-like sources as well, it makes things a lot easier to navigate, even if you still need to know the underlying assembly to make much use of it
