if you mean hide as in just don't show it (you won't be able to get spells from there): probably in `SpellBookFrame.lua`
if you mean hide as in disable and place all spells in the general tab (you won't be able to learn the spells at a trainer): remove the race/class pair from the `SkillRaceClassInfos.dbc` entries

we had someone in our discord who managed to get very customized behavior in the spellbook, so i think it's at least reasonably scriptable in lua
