He means if you change the UV map of the model, which will break a lot of other things

You mean like, if you made textures work non symetrical all old textures will only have half a texture I guess?

Yes and probably many other problems as well. The UV layout (flat space textures are laid out, matching the wireframe of the 3d model) don't have room for a non-mirrored texture
