Just a few more questions...
When updating the core, is it necessary to extract maps again? Assuming a new client version is supported.
And is there an easier way to know what's current client supported version without having to read commit by commit?

if there wasnt a major patch launch on retail within a week (such as 11.0.2 to 11.0.5) then its always latest build

and no, you do not need to extract maps when going from one 11.0.5 build to another 11.0.5 build
