Or is the texture also saved to the NPC items, and WowModelViewer "converts" the NPC into the appropriate character race making these changes possible?

thats most likely due to the model being a player model

Is there a table for where the things like hairstyles are saved for NPCs? Even though the texture is in the armor material.
Or is this part of the NPC Model?
