You cannot enter any custom spells there that the item executes when used, e.g. learning a mount or similar effects on the items. There used to be a tool that worked very well, namely Truice, but unfortunately it hasn't been developed further for years. You could adjust everything there.

For pure quest items this is good or normal equip items no question, but if you want more you have to work directly in the database.

the wow database editor is already very good. Unfortunately, you can't edit and create items with it, that would be the non plus ultra, it would work ^^
