to keep it short, there is probably no easy way and no step by step tutorial for "how do i keep all the stuff i made for an 11 years old repack"

if you didnt do your work in a way that keeps track of your changes, like git or external reapplyable sql files, you gonna have a hard time ahead of you

This is why I always have my custom stuff use ID ranges seperated from Blizzard stuff by at least a factor of 10k.

My custom items start at ID 100,000 and custom NPCs at an ID of 100,000 too.
