If you can't answer this with a 'yes', depending on how old your server is, running updates will probably break it totally

Well, you continue being up to date by pulling and compiling. Pulling the source will place all updates correctly in a folder. After compiling, starting the worldserver will run all updates in the correct order. That's how it works.
