World config , there u Can set it so it hit Max level each time you create a item, Else you Can add a trainer there learn players the Max skills , players Can have 2 professions and need to level it or train on npc for Max levels , dont Think you Can spawn with Max level but Can be wrong

Yeah, I've currently set up a workaround that lets you skill up with any craft. I've been digging through the db tables to see if there's an even faster way.

An own trainer that teaches a max rank profession would require its own script though?

Nah , create a npc with gossip id 35-37 ( not sure what trainer is ) , then add the spells for the professions you want , not sure if you need to add Rank 1-10 or just Can use rank 10

That one is to a autolearn script. Pretty much mop skill learning. As u level u auto learn the skill. No trainer needed
