I use this method on another server which is on Java and there are offline shops in mysql, clans data and other players data, etc. ... same thing.. just kill the processes and nothing happened...

Personal preference.
Current windows server versions are stable and safe. Maybe not as fast and stable as Linux in all points, but since I'm using TrinityCore and not building the next Google data center backend, the only difference is the price, not the performance.

if you send sigterm/sigint it's fine, that's like typing in the shutdown command, but sigkill will terminate the process and all unsaved data is discarded. Modern cores are better with sql transactions than they used to be so you should have less partially written data than before, but it's still not great and crash exploits abusing it are very common. I don't use linux desktop very much so i can't say if closing it interrupts or kills the process. ctrl+c is _usually_ a `SIGINT`, which should be safe, but just murdering the host process probably isn't that nice

in development, I always murder my worldserver which usually causes a slight rollback to my test characters
