I would change the image tag to the new version and run `docker stack deploy` with the same Compose file and stack name

I see. What you can do is set the `DOCKER_IMAGE_TAG` env var. it doesn't need to be something meaningful, just unique. Something like this should suffice
```sh
export DOCKER_IMAGE_TAG="$(date +%s)"
git pull
docker compose build
docker stack deploy
```
