I threw out the acore.sh. It threw all sorts of errors for me. Those are the docker commands it is calling.

right on, the uid stuff may not matter as much depending on how you are doing it. It's something to keep in mind. AzerothCore, at least how they are deploying it interacts with mount points and dending on docker/os security configs can cause all sorts of headaches.

I am using coreos, which has extra security so I had to basically explicitly tell it my apps in the compose file were privileged

There is an option to launch it all in volumes that I didn't try, if you keep getting priv or missing file messages might be worth a try
