I see LoginDatabaseInfo, WorldDatabaseInfo and CharacterDatabaseInfo inside the worldconfig file, but how to launch using the single worldserver.exe process and use the other realm worldconfig file

You don't create the database schemes, you change the names of the DBs in the new .conf file and let the world server create them.
