So just to add to this, I did have to manually 'learn' the spells associated with professions, e.g., Apprentice First Aid, etc. But apart from that everything seems to be all good. I did also find where to manually enter the spell IDs into the database

Those are stored in character_skills, not character_spells, and I can only assume it's for some reason not included in the dumps.
