The truth is that I never had to work with a server of 300 users or more in mind. So all that is performance, I haven't seen it so far. But there must be several tutorials that explain how to optimize mysql. I don't know if Azeroth has any particular recommendation, but if there is, it should be in their wiki.

With respect to AWS, it's a great service, but watch out for DDos attacks because if you don't have it properly configured to the server and block access to intruders, the machine won't hang, it will consume a lot of resources and you'll have to pay for them later. So check that issue carefully to avoid unnecessary charges.
The day the server was opened, we were attacked with DDos, luckily the site was on a different machine, but people couldn't register. We weren't using AWS anyway, but if we had, we would have gotten a pretty big ballot.
