Well it kinda overwrites what it had before What I do personally is just copy them over to somewhere else incase I want to start the server up

I don't know if you can do it that easily. I just make Screen log everything each time it's started and rotate the logs that way.

Makes sense, could just copy the logs away before starting the daemon

I'll like do something like `world_server.sh` which just moves the log to a dated log before actually runing the binary. Headless server
