pool_template and pool_creature is all you need for creatures without multiple pools joined together and without events

Neither of those contain the X, Y, Z coords for _where_ to spawn the pool, though.

Basically, I want to avoid having to find _hundreds_ of valid x/y/z coords and spawning in creatures at those, and instead want to create "pools" or "areas" in which they spawn.

Pools is what mining nodes use to limit the amount of them spawned at once and also alternate when spawning them. It would be the same for creatures.
