The dist is basically just a "this option is missing from your config, I'll use this" kind of deal. Pointless but the server will cry if you don't have it.

Well, playerbots requires a fork of AzerothCore to function (at least for now). Aside from that, I actually have a realm up with them active and they're not horrible. They're not great, yet, but they're not bad. I'm not sure I would trust them to replace players but I haven't given them that much testing aside from stalking them like a creep while they're leveling.

interesting, and sicne they require a fork of azeroth core would that mean I would have to re-go through every single step since the start

Pretty much. Well, configs and client data files (and .dlls) can probably be moved so that part isn't wasted at least.
