I have looked at the azerothcore.org website but couldn't find any info so...
What do you need to backup to just save character with items, progression, achievments and so on?
Would it be possible to do a scheduled backup to Google Drive?

I think I can use rclone to upload the backups to Google Drive

You could use the Pdump GM command to save single characters or schedule a backup for the whole database.
Both requires a script to be automated.

Would it be enough to just backup the "DB characters" to save the character progress and so on?

If so I think I can just do a copy of that database and send it to Google Drive every night
