I actually did that a few jobs ago. CTO liked to run everything "bare metal" Lift&shift from AWS to azure, 3 years later, back to AWS. First migration took 3 weeks (mostly researching how to make machines they only knew how to clone with AMIs), second took 3 days (because I'd already scripted everything the first time)

Hundreds of machines, several server roles (DB, API, Web, etc). Zero downtime.
