just ot make sure i understand proxmox correctly, you install it to your server it hosts your vm's, you conenct to them fro ma seperate pc right? like an ormal large scale vm system

Yes, you shouldn't run the latest version of the offical repo and then switch to npcbots, as Rymercyble that could cause issues and force to you torture yourself with more compiling.

Yes, VMs or LXC containers (docker = isolated application, LXC = isolated OS) run on it just like Xen, vSphere, VMware Workstation/Player, Virtualbox etc etc

just to clarify connecting to VM from different pc is not exclusive to proxmox and im sure u can also have proxmox on same pc

ya when i worked with xenhost i had a pc setup i nthe corner running the xenhost os, and id conenct it from the management console that was on my citrix enviroment controller

If you're used to stuff like Xen and VMware Workstation/Player, the major difference is really that you use a web GUI to manage it rather than the software itself.
