If I were to make a 2nd test server, what would that entail for separating out the two servers? Would I want to make a whole different set of the source folder, or could I target test server vs. live server at compile time?

It all depends on how you want to do it. You could use the same source, on Linux you change the install prefix and run cmake between each and just make/make install twice but no compile is necessary obviously and on Windows you can simply copy the executables to different folders. It would mean you can't use different modules or database files in data/sql.

Back in the day, a year ago or so before I installed and patched my own client, I did use Warmanes client and it was just read-only set to realmlist.wtf.

Yeah, Warmane's client is almost clean, they don't override the realmlist but there's some permission issues with the MPQ's as well and not just the realmlist

Can't remember if they ship any binary edits, but there's quite a few crash issues with their client due to said permission issues
