For the first question the answer is, AzerothCore is not associated with anyone or anything performing client modifications. The second one is you add the addons (unpacked) to the Interface/AddOns folder and they'll show up.

You can change a character model to something that already exists using a database editor like Keira. If you want to make entirely new models that aren't present in the base WotLK game then you need to edit DBCs I think, which is like super illegal last I heard
