with 64gb ram you should be able to do it but it's still a home pc that will have a fair share of it leeched by background apps and other stuff that you're apparently using

I'd recommend using Linux instead since you minimize the background crap.

A minimal installation of Ubuntu uses far less resources than you could reduce Windows to use, giving your server more to use.
