i'm not sure if there's a reliable way to hide the server's IP without causing a delay too big.

I mean in a sense so you can do... "set realmlist testserver" rather than "set realmlist 'IP adress"

No, there's no way to hide the IP unless you use a reverse proxy, which would be pointless. It would still be a pipe
