If I want an NPC to walk around, is that purely scripting, or is there a "waypoints" system and the engine just works it out?

Kinda depends, you can have them stationary, wander around a random radius around their spawn origin, or use waypoints

Hmm. At what point do NPCs start walking again after interacting with them (whilst they were walking)?
