I seem to have fixed it by doing `sudo nano /etc/apt/sources.list.d/mhier-ubuntu-libboost-latest-jammy.list`, changing the `jammy` to `focal`,
manually running `sudo apt-get install -y g++ gdb gdbserver gcc git libboost-all-dev libbz2-dev libncurses-dev libreadline-dev libssl-dev mysql-server`,
then doing `nano apps/installer/includes/os_configs/ubuntu.sh` to remove `sudo add-apt-repository -y ppa:mhier/libboost-latest &&` so it doesn't re-add the repository. Manually running `sudo apt-get` probably wasn't needed, but included it here because that's what I did and someone might control + F that error someday later.

`./acore.sh client-data` resulted in a `/home/alento/azerothcore-wotlk/apps/installer/includes/functions.sh: line 249: /home/alento/azerothcore-wotlk/env/dist/bin/data.zip: Permission denied`, but I didn't run `acore.sh` with root at all?
