Visual studio, more people will be able to help with any issues you come across since more people use it over Docker

Whatever you're comfortable with. I don't like Docker so I can't say you should use it.

And what bench said is true, there are a whole lot of people who can help with VS and not many with Docker.

I will choose the route with the more support then, I know nothing about networking, coding, database, compiling and all that stuff and knowledge needing to do that kind of stuff haha

The wiki is quite good at explaining it. There are a few steps that could be updated to more clearly explain certain things but mostly it's great.

The reason I also wanted to run the servers on my VPS was becaus I wanted it to stay on 24h, which I can't on my own computer

Just keeps a lot more loaded, plus it keeps areas that players visit in memory even after they leave
