Several private server's use Azerothcore. ChromieCraft is the most popular that i am aware of.
I've seen 1.6k online with 10ms update time. I'm sure 5k are no problem at all. Probably lots more.

I don't think any server is a *typical* server, regardless, seeing as many simply go with what they believe they need.

changed a few thingies in the code, and yes, lfd works with 10 toons now
