There is no one-step-back function for SQL dbs.
You want to save all your custom changes as re-applicable SQL files, e.g. with DELETE and INSERT, and store them in your "custom" folder. That way they're re-applied after every core-update automatically.
And if you drop your database because of corruption or mistakes, it's gonna be re-created full automode.

assuming you use heidisql or mysql workbench, right click it and select `drop scheme`
