Or maybe change the characters class from a Paladin to DK, if that would not cause any issues.

Take a look at the tables in your characters database, it's pretty easy to find what you need just by looking at the names. If you need more info on a specific table or field, the wiki can help: <https://www.azerothcore.org/wiki/database-characters>
