creature_template_addon is the default. All creatures that don't deviate from the template use template_addon.
creature_addon is the override, and it's used for specific guids that patrol (path_id), perform animations (EmoteState), are sitting down (StandState), are using ranged weapons (SheatheState) or have different auras.
In the case of auras, the vast majority of cases you need to add the aura to creature_template_addon AND creature_addon, because otherwise creature_addon overrides creature_template_addon.

There are also people that like to add auras through SmartAI, but I feel like it is just pollution and prefer to use _addon as much as possible.
